Ingredients

For the Muffins:

  • ½ cup melted butter (or as I call it, liquid happiness)

  • 1 cup sugar (because Santa said it’s okay)

  • 2 eggs (protein power, baby!)

  • ½ tbsp vanilla (pure magic in liquid form)

  • 1/3 cup sour cream (the secret to moist muffins)

  • 1/3 cup milk (to keep things silky smooth)

  • 1 ½ tsp baking powder (science in action!)

  • ¼ tsp salt (balance is everything)

  • 2 cups frozen raspberries (tart little treasures)

  • 2 cups flour


For the Streusel Topping:

  • ½ tsp cinnamon (holiday spice level: pro)

  • ½ cup flour

  • ½ cup brown sugar

  • 1/3 cup granulated sugar

  • 6 tbsp melted butter


Directions

  1. Preheat the oven: Set your oven to 400°F. If you’re baking at higher altitudes (3,000 feet or above), reduce the baking powder to 1¼ tsp, and slightly increase the flour by about 1–2 tablespoons to ensure your muffins rise beautifully without collapsing.

 

  1. Prepare your muffin tin: Line a 12-cup muffin tin with paper liners. These make 12 large muffins bakery style muffins or 24 cupcake pan muffins.

 

  1. Mix the wet ingredients:

    In a large mixing bowl, combine the melted butter and sugar. Whisk until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla, sour cream, and milk. Mix until fully combined—this will be your creamy, dreamy base.

 

  1. Mix the dry ingredients:

    In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Overmixing will make the muffins dense, so mix with care!
